CyberSec Engineers code?
Wow. Your premise is correct in any industry. Not news. Your salary quotes are off and your assertion that CyberSec Engineers are a bunch of coders is laughable.

Because of the "Sales" In "sales Engineers"
This makes sense. An engineer is mostly asked to code. A sales engineer must not only be able to code, but also develop a relationship with potential customers, be able to conduct Proof of concept projects and interact with many architects and CISO.  That got to be worth some additional $$.
